Carp the most environmentally friendly food product
The carp, which reigns supreme on the holiday table of Poles, is the most ecologically friendly food product in Poland, convince scientists from the Polish Academy of Sciences (PAN) in Gołysz, Silesia. It feeds on natural food, is fed only with grain feeds.
– Carp is probably the most ecological food product that is produced in Poland, because for several hundred years the technology of its breeding has not changed, and it is based on natural food. Carp are fed grain feeds, such as wheat, corn, sometimes triticale – dr. hab told PAP. Eng. Andrzej Pilarczyk of the Department of Ichthyobiology and Fisheries Management of the Polish Academy of Sciences in Gołysz.
As he pointed out: several tens of percent of the growth (carp weight) is on natural food, as if it were a wild fish.
Dr. Patrycja Jurecka stresses that carp is a fish liked by Poles. It is sometimes criticized by consumers for the aftertaste of silt or the presence of bones, but scientists point out that fish properly prepared for sale and well cooked does not have such drawbacks .
If we buy live carp in the store, Dr. Jurecka advises to turn the Pay attention to whether the tank in which rym fish are stored, air is supplied – The taste of the meat of the stewed fish is worse. If you decide to buy ready-made filet , we must pay attention to the pay attention if the meat is not blue. This would mean that it is not quite fresh. When preparing carp, it is a good idea to soak it overnight in milk or buttermilk, so that it acquires a delicate taste and to remove any possible aftertaste of silt.
However, as Andrzej Pilarczyk points out, such an aftertaste means that the manufacturer has made a technological error – fish properly prepared for sale must not have any foreign taste or smell. – After being caught, carp are most often put into storage for a period of several weeks, where they – as we call it in fisherman’s parlance – get chipped off. At the moment we are standing between such warehouses, where the fish fished out of the pond in October has been transferred and waits for itself mostly until the pre-Christmas period, because the decisive part of the carp, however, is sold in the pre-Christmas period – said Andrzej Pilarczyk.
As for the bones, it – as assured – they can be easily eliminated even at home. – One simply cuts quite densely into these muscles, the cut bones are completely undetectable and pose no problem for the consumer, including young children – explained.
